Research & Development

Stafford Bakeries are currently undertaking a Research and Development Project which is grant aided by the European Regional Development Fund and Enterprise Ireland under the Border, Midland and Western Regional Operational Programme 2014-2020.


The purpose of the project is to enhance flavours by adding natural sourdoughs to existing recipes and to develop new products using sourdoughs.


A number of recipes have been adjusted and new products developed using sourdoughs which has greatly enhanced flavours. The popularity of products with sourdough enrichment has grown significantly.
